The kids are not morning people, therefore breakfast time is a hurried, harassed start to the day. In trying to reduce the stress before we’ve even begun the day, I developed these flapjack esque soft breakfast bars for eating in the car, en route, freeing up valuable minutes pre school run. I take one in my bag for elevenses. They’re delicious, healthy, packed with omega 3 and magnesium, both of which are in decline in our diets, but greatly needed for our brains and bodies to function correctly.
They’re also so fast to make; I made them, cooked them and we ate them, all in 45mins this morning. Usually, I’ll make them the night before and I’m currently batch cooking them for the rest of the week. I cook them in a 18cm sandwich cake tin and slice like a cake.
Makes 6 slices, I eat 2 for a meal replacement.


100g oats
100g plain yoghurt
2 heaped tbsp milled linseed
2 heaped tbsp mixed seeds, sunflower, pumpkin, linseed etc
2 heaped tbsp raw cacao
1 tsp baking powder
2 tbsp honey
3tbsp sultanas or equivalent
6 tbsp hot water
Mix together
Grease a baking tin
Spread into tin and bake for 20min at 180°C
Cool, slice, eat. Store in a tupperware in the fridge.
