Gluten free oat and chocolate cups

Called this because they’re measured in cups and look like little cup cakes! Chewy at the edges, gooey in the middle…they are honestly going to have you baking more and more… in fact I dedicated lunch to 3 of these little beauties today. Seriously try them…

1 cup of gluten free oats

1/4 cup honey

1/4 cup dark chocolate drops (optional, but I would)

1/2tsp baking powder

2 tablespoons of coconut oil

10 tbsp milk

1 egg

2 tbsp chia seeds

2 tbsp milled linseed

pinch of salt

Method:

Put it all into a bowl and stir together

The mixture will be quite wet, but that’s good.

Spoon into 9 cupcake wells in a baking tray – use a non stick one or pre grease

180 degrees Celsius for 20-25mins

Remove when brown around the edges

cool on a wire rack

gobble them down before anyone knows you’ve been cooking, or you’ll have to fight them for one.
