Cauliflower shawarma and houmous

I love the shawarma spice mix and created this super tasty little number with a few bits from the fridge, but it’s so good, I’m sharing it with you.

Ingredients in bold, but pick and mix with what you have in the fridge. You could add chick peas to make it more substantial. Add these to the air fryer with the cauliflower with10mins left to cook, or boil in a pan.

Cauliflower florets – drizzle in oil and shake over the shawarma spice mix, then turn so they’re all covered

Mushrooms – cut in half, unless big then quarter and turn in the cauliflower and spice mix bowl

Put these in the air fryer for 15minutes at 200C. Shake half way through to cook the other sides

Add washed and chopped curly kale to the back of the air fryer drawer with 6 minutes to go of cooking time, bring the cauliflower and mushrooms to the front – they should have reduced in size by now.

Remove from the air fryer when the cauliflower looks browned and the kale toasty.

Put onto a plate and then blob around houmous

Shake over nigella seeds and salt to taste
