This was really tasty and so I’m posting it as an idea for your dinner

Ingredients in bold – but these can be changed depending on what you have in!
Boil some wild rice, black rice, wholemeal rice, or carmargue rice in a pan. Drop some broccoli stems in for the last 5 minutes of cooking time.
Air fry a large mushroom drizzled with a bit of oil for 8-10 minutes, depending on size, at 200C. Add cut and washed curly kale drizzled in oil for the last 5-7 mins to the back of the air fryer drawer, pull the mushroom to the front.
In a frying pan on medium, fry some spring onions chopped into large segments. You could add the kale to this pan for the last 5 mins if your air fryer is small. Keep turning, but allow the spring onions to toast a bit.
Cook some peas and edamame beans from the freezer in a bowl in the microwave for 3-5mins
Assemble by spooning a few tbsp of rice first onto the plate, then add the mushroom, then the other veg on top.
Finally slice some soft goats cheese and crumble that over.
Salt and pepper to taste.
