Banana and oat cookies

Perfect for breakfast on the go, or a snack, they are loved by the whole family, made in minutes and cooked in just 10 in an air fryer. Super easy, super tasty, super healthy.

240g banana, about 3 medium bananas. Squash the banana in the skin to make mixing easier

120g rolled oats. About 1 cup. If your bananas weigh more then go half the banana weight in oats.

2 tbsp peanut or nut butter

1tsp baking powder

Optional: (but worth it, especially the seeds for omega 3 and fibre)

30g dark choc drops

40g currants/mixed dried fruit

1tbsp milled linseed

1tbsp chia

Mix in a bowl and line the airfryer or baking tray.

Divide into 4 blobs and shape into cookie shapes.

Air fry for 10mins at 180°C

Or bake in oven for 25mins at 180°C
