Crunchy beef burrito

Dish delish and super speedy. What more could you want for a tasty dinner? The kids declared them “favourites”.

Crunchy beef burrito

Ingredients

1 pack (6 minimum) large flour wraps

500g 5% fat minced beef

Strong grated mature cheddar cheese, about a handful per burrito.

2 tsp Chipotle paste

2 tbsp tomato puree

2 regular carrots, finely chopped

1 onion finely chopped

Salt, pepper, olive oil

Method

Add olive oil to a frying pan and fry off the onion and then add the carrot. Cook until soft.

Then add the minced beef and cook until browned. Keep the heat high so the mix remains dry and doesn’t boil in its juices.

Stir in the Chipotle and tomato puree.

Add salt and pepper to taste.

Continue to dry fry until it is a deep brown colour. Remove from the heat.

Take a wrap from the bag. Fill the wrap in a line down the centre, leaving space at the sides and a larger one at the front and back. Top with grated cheese. Fold as per the pictures below.

Take a clean frying pan and heat a drizzle of oil. Place the wrap fold down onto the hot frying pan and squash carefully with a spatula so the wrap is slightly flattened. Don’t press too hard, or it will burst.

Leave for about 20seconds, or until the base is browned, then flip over. Using tongs hold the burrito on the sides and brown twisting the pan to get the oil onto the wrap.

Serve and eat by picking it up, but be careful because it’s just come out of a hot frying pan!
