Protein pancakes

A lifelong hater of cottage cheese, until now. Try these simple protein pancakes for breakfast.

1 tub 300g cottage cheese – check the ingredients all it should contain is milk and maybe a bit of salt. Also not all cottage cheese is the same. Some of the value brands have better protein and fat grammes than the premium brands.

2 eggs

2 tsp baking powder

1 heaped cup of oat flour – put oats into your food processor and whizz until flour like.

A splash of milk, approx 1tbsp.

Honey or maple syrup to serve

Put the cottage cheese, oat flour, eggs, baking powder and splash of milk into a smoothie maker. Whizz until smooth.

Pour onto a preheated non stick pancake pan or skillet.

Flip over after a minute, or when bubbles appear in the pancakes.

Cook for a further minute on the other side. Then serve with honey/maple syrup.
