Cottage cheese chocolate mousse

I know, I wasn’t sure either…as a self proclaimed hater of cottage cheese it took me a while to pluck up the courage to try it, but oh boy, it was well worth it. I now make it into 2 jam jars; one for today, one for tomorrow and basically keep this on repeat. It lasts a few days in the fridge.

I have a ninja mini chopper and it works great for this, but a stick blender or any kind of chopper will work too.

What you need:

1 tub cottage cheese (300g) – look at the fat, calorie and protein amounts… Not all cottage cheese is born equal. I found the value versions often have more protein and less fat. It should also contain nothing but milk and maybe salt.

2 tbsp raw cacao

1 tbsp honey

1 tbsp chia seeds

How you do it:

Put it into the blender and whizz. It takes 30ish seconds on blend. You notice a change in sound when it’s ready it is very audible.

Spoon into 2 glass jam jars (or whatever you want to serve it in)

Put in the fridge to set.

Eat.

I ate it with raspberries, but equally it’s delish on its own

Planning in pudding is well worth it. I often have this later on in the evening and it saves the extra calories/fat/UPF  in snacking as it’s thick, chocolatey and filling.
