High in protein, could be made gluten free. Super easy and scummy. Great after workout dinner.

1 flour tortilla wrap.
You can use any type, so pick gluten free, or spinach or seeded, whichever you fancy.
3 eggs
1/2 tub cottage cheese (150g) full or half fat. Half fat is more watery so might need slightly longer cook time but a couple of minutes.
2 mushrooms, thinly sliced
Handful of spinach if you fancy, but not too much or it goes watery.
Handful of grated cheese
Salt and pepper
Method:
Lightly oil a cake tin and press the wrap into it. Make sure the wrap comes up the sides of the tin.
Break the eggs into the base and add the cottage cheese. Stir inside the wrap base.

Add the mushrooms, salt and pepper, and stir

Add spinach, if you are doing this. Stir.
Sprinkle over cheese and press it down into the mixture

Put in the oven 180°C 20min

Serve!
