Protein rich apple muffin.

These are incredible. They taste naughty, but are actually healthy and high in protein with approx 7g protein per muffin.

300g pot of high protein cottage cheese, full fat

100g or 1/2 cup soft brown sugar

50g or 1/2 cup ground almonds

150g or 1 1/2 cup jumbo oats

100g or 3/4 cup wholewheat flour

1tsp baking powder

3/4 tsp bicarbonate of soda

Juice 1 lemon

2 eggs

3.5tbsp milk

100g apples, whizzed in the chopper (or 100g other fruit or berries, berries can be added whole)

Method

Put the cottage cheese and brown sugar in a small processor and whizz until creamy

Put all the other ingredients in a bowl and mix.

Fold in the cottage cheese mixture

Spoon into 12 muffin cases in a muffin tray

Put into a preheated fan oven at 170°C

30mins

Remove and cool on a wire rack.

Devour.
