Celeriac coleslaw

I never would have thought it, but this dish using raw celeriac is simple and surprising. It’s much less cloy than usual coleslaw and would work so well with a sharing platter of meats and vegetable sticks.

I used an electric grater or you could use a food processor to save time. It was easy to grate though, so a hand grater would work fine too.

300g ish of peeled celeriac

1/2 lemon, squeezed

3 tbsp Greek yoghurt, full fat

2-3 tbsp mayonnaise

Grate the celeriac, then add the remaining ingredients and stir together. Grind over cracked pepper and possibly another splash of lemon juice. No need for salt.

Job’s a good ‘un.
