
In my vegetable box this week, there were a few of these odd looking vegetables, which my brain recognised as kohlrabi, but other than that I had no clue what to do with them. A quick google search revealed they could be eaten raw, so I came up with this and I’m really delighted with how tasty it is!

Peel and finely slice the following: (I used one of each)
- kohlrabi
- golden beetroot (you could use the red beetroot, but they have a stronger earthy flavour and are not as sweet, so if you can try and find the golden one)
- apple


Put into a bowl and add:
- 1-2tbsp tahini depending on how much veg you chopped
- juice of a lime
- salt to taste
Mix and serve, with pepper if desired! I paired it with a steak, pan fried for a few mins on each side.
I’d be interested to try this selection in an air fryer, minus the tahini/lime, to see what they taste like as chips, let me know if you give it a go!
