Flapjacks that are more oat and fruit slice than toffee grease with oats in there somewhere. These are healthy, delicious, can be enjoyed guilt free and are super easy to make.
2 small eating apples, skin on and cored
2 small pears, skin on and cored
3 tbsp honey
5 tbsp coconut oil
1 tbsp ground cinnamon
65g mixed seeds: flax seed, pumpkin, sesame etc
Put the quartered apples and pears into the whizzer, I’ve just bought the mini ninja and it’s amazing. Whizz until pureed.
Put the oil and honey into a saucepan and melt.
Add the cinnamon. Stir until smooth.
Add the fruit puree and warm
Add the oats, raisins, seeds and mix together until the oats start to release gluten and it gets a bit “sticky” or binds together.
Press into an oiled tray
Oven 180°C for 15mins
Score into 9 squares then cool then eat!
