Cauliflower couscous lunch

Super easy, low carb, healthy lunch

Be the envy of the office!

1 cauliflower, washed and blitzed in the food processor until large crumb sizes

1 onion chopped

Veg: chopped into small bits. I used: 1 beetroot, 8ish mangetout, 1 red pepper, 1/2 cucumber, 1 large tomato, 8 or so olives

Fry off the onion in olive oil until soft. Add

1tsp ground cumin,

1tsp ground coriander

1tsp ground tumeric

1 tsp salt

Then add the cauliflower and stir for about 5min until cooked al dente (crunchy). Then turn off the heat.

Then add the chopped veg

Then add some chopped nuts. I used a good handful of walnuts and another of almonds and blitzed them until quartered in the processor then pop in the pan with the veg.

Stir through.

Add some chopped herbs. I used coriander, parsley, basil.

Stir until well mixed.

Pop into a tupperware. It’ll make 4 lunches.

You can add extra tomato, olive oil and feta each day to this, using the cauliflower couscous as a base.
