Cauliflower pizza

I love, I mean LOVE pizza. The stringy, melted cheese… But it does not love me. This is a brilliant alternative. You need to do the three stages, otherwise it will be a soggy mess, but it’s easy and delicious and won’t leave you feeling bloated and uncomfortable.

Base

1 x cauliflower, between 600 – 800g (extra large size) chopped in the ninja/processor to small pieces like chunky flour.

120 – 150g ground almonds (depending on how big your cauliflower is) If you don’t have ground almonds, as I once didn’t, you can use 150g of various flours, or split it eg 75g rice flour, 75g buckwheat flour, but it’s not as nice. I’d stick with ground almonds! Much healthier and tastier.

2 eggs beaten

Salt

1 heaped tbsp mixed herbs

Toppings

A tube of tomato paste. I used sun dried paste from epicure and it was lovely. I used the whole tube, I usually use half a tube of the regular stuff

Finely sliced mushrooms, ham, olives, etc whatever you fancy

I tried some red pepper tapenade from Belazu.. It was lovely put on in 1/2 tsp blobs

Grated cheese and grated mozzarella

Stage 1

Whizz the cauliflower in the processor

Put in a frying pan with oil in the bottom and cook for 10min turning. It needs to dry out and go white and clump a bit.

If you skip this stage it is too wet, so don’t!

Stage 2

Put the rest of the base ingredients in a bowl then add the cauliflower. Stir together. It forms a wet mix, but hardens when cooked.

Spread this wet mix onto a greased baking tray

Put in a 200°C oven for 10 mins

After 10mins in the oven

Stage 3

Put on the toppings

The return to the oven for 10-15 mins until it has browned and the cheese has melted

Eat.

    Looks and sounds excellent – Flour is a killer for me too, so will definitely give it a go! Did your fussy kids eat it ? 😬

      they tried it! It wasn’t a favourite because it wasn’t pizza, but that’s fine, more for me!
