Air fryer, gluten free, banana bread

A Deliciously Ella inspired creation.

3 bananas, skinned (about 300g)

230g gluten free flour such as buckwheat. You could use plain flour too, if you’re not worried about gluten.

40g caster sugar, or 50g coconut sugar. It’s not very sweet, so if you want it sweeter, add more sugar, taste test before baking.

1tsp bicarbonate of soda

1tsp baking powder

2 tsp ground cinnamon

4 tbsp milk, or equivalent

60g raisins, to be added later

3 tbsp extra virgin olive oil

Put everything, except raisins, in the food mixer. Whizz.

Remove blade and stir in the raisins.

Dollop the mixture into a loaf tin liner in the air fryer drawer

Cook at 160° C for 45mins. Check half way to see if it’s burning, if it us, turn it down to 140°C

Alternatively you can cook in a loaf tin on a conventional fan oven for 45mins at 180°C.

Remove and cool on a wire rack. Serve with butter.
