Healthy banana bread

This was inspired by a new instapage whatmolly.eats. I’m loving her stuff. I did fiddle the recipe to make it a bit cheaper and fit with what I had in the cupboard and it’s so delicious, squishy, sweet but not overly so and extra healthy with added flax and chia. All in one bowl. Try it!

3 bananas, decent size. Mine were on the greener side so I upped the sugar, if they’re more yellow reduce the sugar by 15g or so.

2 eggs

80g demerara sugar

50g olive oil

190g self raising flour

25g chia seeds

25g milled flaxseed

40g raisins

Sprinkling of chocolate drops for the top

Put it all in a bowl (minus raisins and choc drops) and mix. I did it in the food processor, but added the raisins at the end and manually stirred them in so they didn’t get blitzed.

Pour it into a lined loaf tin

Sprinkle over some chocolate drops – you could not do this if you want to be healthier.

Oven at fan 170°C for 45mins

Cool on a wire rack and I lathered over salty butter to eat it, but you could leave off that step as it was super squishy and delicious on its own.
