Jewelled good-for-me flapjacks

Thanks to Dale Pinnock @themedicinalchef for the basis for these beauties. Delicately flavoured and wholesome, with no refined carbs… What more can you ask for in a break time treat? Peel and puree 2 pears (Dale uses apples… I had only pears and these worked just as well) Put in a saucepan with 2 tablespoons coconut oil 2 tbsp honey 2 tsp cinnamon Melt it all together. Add: 1 tbsp pumpkin seeds 1 tbsp brown linseed A good handful of dried fruit – i used dried cranberries About 5 or so dried apricots snipped into small chunks A tbsp of dried peel Stir it together Add: 180g raw oats Stir and put in oiled a 20x20cm baking tray In a preheated oven at 180’C for 20min Remove and score gently into slices Leave in the tray to cool. Eat.
