
These are a tweaked Deliciously Ella recipe and I cannot recommend them enough. I’ve reduced the sugar and used a diabetic jam, but still find them plenty sweet enough. I also removed the milk. They are truly delicious!
1 tbsp milled flaxseed
75g oats, put in a blender to make flour
60g ground almonds
2 tbsp melted coconut oil
2 tbsp maple syrup
20g (could be lower again) coconut sugar
1tsp vanilla extract
A sprinkle of salt
Diabetic jam – I love Streamline less sugar strawberry jam brand
Mix together in a bowl and form small golf ball sizes press onto a non stick baking tray and put a thumb indent in the centre to create a well for the jam.
Spoon a small amount of jam into the well, careful to not overfill as the jam will melt in cooking.
Pop them into a preheated oven 180C for 12 mins

Remove and cool on a wire rack, be careful the jam is molten lava hot!
(I just trialled these with 10g, 1 tbsp coconut sugar, they were plenty sweet enough but a bit more crumbly when creating the jam well. They still formed balls and shaped fine on the tray, but it might be worth upping the coconut oil to make one tbsp rounded rather than flat to offset the loss of sugar, but they still work perfectly well with less sugar.
