Nutty, seedy flapjack

Healthy snack

A Jamie Oliver Superfood recipe and a great one at that. A bit faffy, I’m normally a one tin girl, but it makes 24 flapjacks, which is enough for the whole family for the week, so worth the extra washing up.

200g mix of unsalted nuts (brazils, cashews, almonds, hazelnuts etc)

100g mixed seeds (pumpkin, sesame, hemp, chia, sunflower etc)

200g dried fruit (raisins, dates, apricots etc)

2 heaped tsp ginger

1tsp tumeric

4 oranges, squeezed

4 bananas, peeled

2 tbsp honey

350g oats

20g oat bran

Put the following into the food mixer and whiz until small chopped nut consistency:

Nuts, seeds, dried fruit, spices

Put the following into the blender, or smoothie maker and blitz until puree:

Bananas, orange juice

When blended, top the smoothie up to 1,000ml with hot water from kettle.

Put the blended juice and water into a large stove top pan. Heat until bubbling.

Then add the nut mixture. Stir.

Then add the oats

Stir on medium heat until the oats start to go “gluey” ie release their starch. This requires some serious man power to stir and a decent wooden spoon. About 5mins. Don’t allow it to burn on the bottom, remove from the heat if this looks likely and turn heat down.

Turn it out into two square 24cm tins (greased) press down with silicone spatula and score 12 flapjacks in each tin.

Put in the oven (180°C) at the bottom for 45mins, or until it starts to brown.

Remove and cool in tin before turning out. The scoring will aid the cutting now.

Keep in a tupperware in the fridge.

  1. In the US, Flapjacks is just another word for pancake, so this i quite surprising to me!

      They’re an institution to themselves over here!! A breaktime snack. Baked oats in sugar done a million different ways. Really, try some… Lifechangers . The golden syrup, oat variety are the best but unbelievably calorific and fatty so not for everyday!! I have a few varieties here, all healthy and omega 3 rich. Happy flapjacking!
